I made a scrumptious little side tonight and wanted to share it.
Take ripe tomatoes and slice two or three down into maybe 1/4 to 1/2" slices depending on how many people you are feeding.
Slice either fresh mozzarella or aged smoked mozzarella cheese to fit the tomatoe slices.
Lay the tomato slices out on a plate or tray and drizzle with olive oil then season to taste. I used fresh Italian oregano from my garden, a touch of parsley, and Montreal Steak Seasoning to taste. Top with the cheese slices.
Allow to stand for a few hours for sharper mix of flavors.
Option: serve cold or place in broiler for a minute or two to melt the cheese.
Of Note: We ate as an appetizer/side with grilled burgers as well placed them on the burgers. DEEE-LICIOUS!
